Penggunaan jenis ikan laut sebagai bahan baku surimi perlu diperhatikan untuk memperoleh cumi-cumi analog yang diminati masyarakat. Tujuan penelitian ini adalah mengetahui karakteristik surimi dan cumi-cumi analog dari jenis ikan laut yang berbeda serta mengetahui jenis ikan laut terbaik yang digunakan terhadap karakteristik cumi-cumi analog. Metode penelitian yang digunakan yaitu experimental laboratories menggunakan Rancangan Acak Lengkap (RAL) dengan perlakuan jenis ikan laut yang berbeda yaitu (A) ikan swanggi, (B) ikan kurisi, dan (C) ikan kuniran dengan tiga kali ulangan. Data parametrik dianalisis menggunakan ANOVA dan uji lanjut Tukey HSD. Data nonparametrik dianalisis dengan Kruskal-Wallis dan uji lanjut Mann-Whitney. Hasil penelitian menunjukkan bahwa jenis ikan laut terbaik berdasarkan karakteristik fisik dan kimia cumi-cumi analog diperoleh dari ikan swanggi dengan nilai gel strength surimi dan pH surimi 2.591,13±45,54 g/cm2 dan 7,12±0,08 serta cumi-cumi analog dengan nilai cohesiveness 0,44±0,01, elasticity 8,81±0,17 mm, derajat putih 77,89±0,87%, Water Holding Capacity 53,33±2,31%, kadar air 67,16±0,75%, kadar abu 15,00±0,95%, kadar protein 57,90±1,22%, kadar lemak 1,48±0,51%, pH 6,92±0,01. Jenis ikan laut terbaik berdasarkan uji hedonik diperoleh dari ikan kurisi dengan nilai selang kepercayaan tertinggi sebesar 4,46 ˂ µ < 4,70 pada tingkat kepercayaan 95%.}, issn = {2685-3701}, pages = {43--53} doi = {10.14710/jitpi.2020.8088}, url = {https://ejournal2.undip.ac.id/index.php/jitpi/article/view/8088} }
