Pemberian garam yang terlalu banyak bisa menjadi salah satu faktor terjadinya oksidasi lemak pada ikan asin. Penelitian ini bertujuan untuk mengetahui pengaruh dari perbedaan konsentrasi garam terhadap oksidasi lemak tidak jenuh dan mengetahui konsentrasi garam terbaik pada ikan ekor kuning asin. Metode penelitian menggunakan Rancangan Acak Lengkap dengan konsentrasi garam yang berbeda (0%, 20%, 30%, dan 40%). Data parametrik dianalisis menggunakan analisa sidik ragam (ANOVA) dan Uji Beda Nyata Jujur (BNJ). Data non parametrik dianalisis menggunakan uji Kruskal-Wallis dan Mann-Whitney U. Hasil penelitian menunjukkan bahwa perbedaan konsentrasi garam memberikan pengaruh yang berbeda nyata (P<5%) pada nilai PV, FFA, kadar air, Aw, kadar garam, dan TPC. Konsentrasi garam yang semakin tinggi menghasilkan nilai kadar garam, PV dan FFA semakin tinggi. Sebaliknya, pada parameter kadar air, Aw, dan TPC menghasilkan nilai yang rendah. Perlakuan konsentrasi terbaik terdapat pada ikan ekor kuning asin dengan konsentrasi garam 20% yang menunjukkan nilai PV yang rendah yaitu sebesar 9,60 meq/kg, FFA sebesar 0,83%, kadar air sebesar 36,99%, Aw sebesar 0,75, kadar garam sebesar 22,12% dan TPC sebesar 4,9x105 CFU/g. Berdasarkan hasil uji dapat disimpulkan bahwa perbedaan konsentrasi garam mempengaruhi proses oksidasi lemak dan konsentrasi garam terbaik ialah sebesar 20% berdasarkan nilai oksidasi lemak pada ikan ekor kuning asin.}, issn = {2685-3701}, pages = {67--75} doi = {10.14710/jitpi.2019.6748}, url = {https://ejournal2.undip.ac.id/index.php/jitpi/article/view/6748} }
