Tulang ikan mengandung unsur penyusun tulang berupa kalsium, dan fosfor. Kalsium hanya dapat terabsorpsi dengan baik apabila diubah dalam bentuk mikro. Tulang ikan sebagai sumber kalsium dapat diubah menjadi nanokalsium agar penyerapan pada tubuh menjadi maksimal. Penambahan nanokalsium dapat dilakukan pada beras analog sebagai salah satu pangan fungsional. Tujuan penelitian ini yaitu untuk mengetahui penambahan nanokalsium dari jenis tulang ikan yang berbeda terhadap kandungan kalsium pada beras analog. Proses pembuatan beras analog dilakukan dengan penambahan nanokalsium dari tulang ikan swanggi, bawal, mujair, kemudian ditambahkan tepung umbi garut dan tepung Gracilaria verrucosa yang dapat menambah kadar serat pada beras analog. Hasil penelitian menunjukkan bahwa beras analog dengan penambahan nanokalsium tulang ikan bawal (5%) mempunyai kadar kalsium tertinggi sebesar 1,68 ± 0.03 %, kadar air terendah, 9,73 ± 0.01%, kadar protein tertinggi 1,64 ± 0.01 %, kadar lemak terendah 0,26 ± 0.03 %, dan kandungan asam amino terbanyak pada asam glutamat dan asam aspartat. Uji hedonik yang diperoleh dengan selang kepercayaan 95% adalah 4.36 < μ < 4.61 sehingga dapat disimpulkan bahwa nasi analog yang dihasilkan disukai panelis dengan karakteristik warna nasi cokelat, bau spesifik, tekstur pulen, dan rasanya hambar.}, issn = {2685-3701}, pages = {1--10} doi = {10.14710/jitpi.2019.6741}, url = {https://ejournal2.undip.ac.id/index.php/jitpi/article/view/6741} }
